Test Kitch ~ Pumpkin Cupcakes

Really this should be called Pumpkin Cupcakes with Maple Cream Cheese Icing and Graham Cracker Topping. Oh and DELICIOUS!

These are such a great, light alternative to the traditional pumpkin desserts. Here are the goods (makes 24 cupcakes):

Cupcakes
1 box of white cake mix (and ingredients to make it)
1/2 - 3/4c of pureed pumpkin
1t each cinnamon, nutmeg and allspice

Icing
1/2c margarine
1 8oz pkg of cream cheese
3c icing sugar
3T maple syrup
1t vanilla
(makes enough icing for 48 cupcakes ~ you can half this recipe for 24)

Topping
1/4c chopped nuts (I used cashews)
1/4c graham cracker crumbs (I chopped up 4 graham crackers)
1T margarine (melted)
1T brown sugar

Prepare your cake mix according to the package instructions. Add pumpkin and spices. Bake. Allow to cool. Blend together ingredients for icing. Combine ingredients for topping. Ice and top. You can even follow my super helpful video instructions:



The boys enjoyed the light pumpkin flavour of these - it wasn't too overpowering. And with the maple icing and graham topping.... well. You know how long these must have lasted in my house.

This looks so great for the holidays. I love the crunchy topping. This looks so easy and how fun to use a cake mix too. We will try this one.
