How's it going? I feel like summer is flying by!
We've been grilling up some good eats though and these vegetables are no exception.
I bought some lovely vegetables at the Farmer's Market the other day. These young carrots and fresh beats were just calling out to be grilled. I love grilling things on the bar-b-que this time of year. It can get so hot inside the house that I would hate to turn the oven on or turn our air conditioner up. Besides, grilling adds a depth of flavor to any meal.
Start by peeling the carrots and beats. Slice the beats about 1/4" thick. Use caution as the beat juice will stain pretty much anything. Then drizzle with 1 Tbsp olive oil and sprinkle with a pinch of salt.
Place on a grill preheated to medium and cook for about 8 minutes before turning the vegetables and cooking for another 8 minutes on the other side.














































yum! We've grilled carrots, but haven't tried beats, yet. We have a sack in the fridge. I'll have to try that tonight!
