4 Orange Marmalade

 Howdy peeps!
I decided to give Orange Marmalade a try this week.
We had a huge Costco pack of oranges that were starting to kick the bucket and it's always nice to find something to do with aging fruit.
I peeled and chopped six cups of fruit and thinly sliced the peel of one orange.
Then I combined the fruit and peel with six cups of sugar and six cups of water.
I brought the mixture to a nice rolling boil, added two packages of pectin and reduced until it reached a jam like consistency.  I highly recommend using two packs of pectin.  In my first batch I only used one and the jam didn't set.  I had to reprocess it and add more pectin.
Pour into hot, sterilized jars and process in a hot water bath for 15-20 minutes depending on jar size.
 Hooray!
Another new recipe for me and more canning to go into our Christmas baskets.

  4. One package is 50g so you will need 100 grams of pectin :)
