Potato Chip Casserole Recipe

Ingredients:

  • 1 bag no egg yolk noodles
  • 2 (6 oz) cans tuna
  • 1 (10.5 oz) can cream of mushroom soup
  • 2 cups cheddar cheese, shredded and divided
  • 1 cup sour cream
  • 1 cup Lays potato chips, crushed
  • 1 cup mushrooms, sliced
  • 1/2 white onion, diced
  • 1/2 cup (2 stalks) celery, diced
  • 1 Tbsp oil
  • 1/2 cup milk

Directions:

1. In a large pot, bring water to a boil over medium-high heat, add egg noodles and cook until tender, about 10 minutes.

2. Drain the noodles.

3. In a large skillet over medium heat, sauté onion, celery and mushroom with olive oil. Cook until the onion is translucent, about 10 mins.

4. In a medium mixing bowl combine soup, half of the cheese, sour cream and milk. Mix well.

5. In a large bowl crush lays chips, add 1/2 the cheese and mix.

6. In a 9×12 casserole dish combine tuna and noodles. Add vegetable mixture.

7. Add sauce to the noodle mixture and combine well.

8. Top the noodles with the chips and cheese.

9. Place the dish in the oven preheated to 350 degrees.

10. Bake for 25-30 minutes or until cheese is melted and casserole is bubbly.

Serves 6-8 with leftovers for lunch the next day!

While this cheesy casserole recipe is a classic, it’s easy to change it up to your liking! Try these ingredients instead!

Recipe substitutions:

  • Use cream of chicken soup or cream of celery soup instead of mushroom.
  • Not a fan of tuna? Use leftover rotisserie chicken or cooked ground beef as an alternative.
  • You could also substitute hash browns or brown rice for noodles.
  • Try adding parmesan cheese or tex mex cheese to the potato chip crumbs.
  • Add garlic salt, black pepper or onion powder to taste.
