Vegetable Campfire Dip

As our camping season slowly comes to an end I simply have to leave you with this beyond amazing Cheesy Vegetable Campfire Dip recipe!  Its perfect for a light lunch with the family or sharing as an appetizer with friends.  We seriously have this campfire dip every time that we go camping.  I often double this recipe whenever I make it because it gets devoured in no time.

How to make cheesy vegetable campfire dip: 

Place all of the ingredients into a tin foil packet and set over the coals of a fire {or a bar-b-cue on low} until the ingredients are melted and well incorporated.  This usually takes about ten minutes for us.  Be sure to keep the packet out of direct flame to prevent the delicious insides from burning.

We like to serve this dip with a variety of vegetables, crackers and tortilla chips for dipping.  I have fond memories of other campers asking us “what on earth are you making?”, trying some of this dip and falling in love!  It is just that good.

Tips for camping meal preparation:

  • Prepare meals in advance at home whenever possible.  Leave most of the mess at home where running water is more accessible and clean up is easier.  Trust me on this one!
  • Create “one pot” family style meals for quick dinners that don’t require a lot of thought. 
  • Use tinfoil packets, foil pie pans or camp cookers. These tools help to make clean up a breeze!
  • Pack ingredients in 1 gallon size freezer bags for flexible storage in small fridges and coolers.

It’s easy to personalize this cheesy vegetable campfire dip to your families liking.  Simply substitute your favorite kind of cream cheese for the harvest vegetable cream cheese in this recipe. 

My friend Holly likes to use Jalepeno cream cheese for a spicy kick to their campfire dip.  I use herb and garlic cream cheese and homemade salsa most often.  Just typing up this recipe has me wanting make more of this dip asap.

Basic camping food tips:

Follow these tips to make sure that you have the right variety of foods packed for your next trip.

1.Use fresh food first.

Fresh foods like meats, fruit and vegetables should be eaten at the beginning of your trip.  Don’t make the mistake of reserving these items as they are more likely to spoil, wasting money and leaving you with less food to consume.  These foods have been know to go off during our camping trips so it’s best to eat them first.

2. Use frozen foods next.

Frozen foods are great for packing while camping.  They can be used as additional ice packs in coolers and consumed at a later date as they defrost.  Meals should stay in the cooler or refrigerator until ready to be eaten.  Be especially mindful of frozen meats that can spoil easily.  It’s best to eat fresh and frozen foods before moving on to non-perishable items.

3. Finally, use non-perishable items.

Once the fresh and frozen foods that you have packed are eaten, start to use up your non-perishable items.  Non-perishables can include things like: crackers, popcorn, rice, pasta and canned goods.

4. Keep snacks on hand.

Packing a wide variety of snacks is always a good idea.  Depending on the activities that you are doing while camping, you may need the extra calorie consumption.  Or if your other foods spoil, you have something else to rely on.  We like to pack: sunflower seeds, nuts, protein bars and beef jerky.

How to make a tinfoil packet:

  • Cut two pieces of aluminum foil large enough to cover the entire meal (about 12″).  Layer them one on top of the other.  Optional: spray the interior with non stick spray or line with parchment paper.
  • Place recipe ingredients in the center.  Bring up the longer edges of the foil and fold together.  Grasp one end and roll it up, repeat with the other end.
  • Alternatively foil pie plates may be used to cook foil packet meals.  Simply place the recipe ingredients into the pie plate and cover with aluminum foil before cooking.
  • For best results cook the foil packet on a grill over the open fire.
  • Use caution when handling the foil packet as it can become hot while cooking.

  • 1 tub of Garden Vegetable Cream Cheese
  • 1 cup of salsa
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup diced green onions

Instructions
