Almond Butter Bites Recipe

These Almond Butter Bites are beyond delicious!  They are the perfect snack for busy families on the go and mommas who need a boost of energy.  They are also sugar-free, peanut free, dairy-free and gluten-free (depending on what brand of oats that you use).  Good luck trying not to eat these all in one day – they are seriously that good!  I like to throw them in the freezer for easy storage and saving.

If you have dietary restrictions be sure to look at all of your labels.  We love these Steel Cut Oats but unless your oats are labelled “gluten free” they may be cross contaminated with wheat (thanks Kim for that tip!)  I also try to only buy unsweetened coconut to avoid the added sugar.  Costco has a really great selection of healthy food alternatives and that is where I purchased our Almond Butter and Hemp Hearts.  Hemp hearts are an awesome grain that I love to add to recipes, smoothies and salads.  I often use them as a substitution for oats or seeds.

Ingredients
  • ½ c almond butter
  • 1 c steel cut oats
  • ½ c shredded coconut
  • ½ c hemp hearts
  • ¼ c honey
  • ⅛ c mini chocolate chips
Instructions
  1. Combine all of the ingredients well in a medium bowl.
  2. Roll into walnut sized balls.
  3. Store in the refrigerator or freezer.

These are a hit with the whole family!  I love that the kids are eating a snack full of real-food ingredients and protein.  The boys call these “cookie dough balls” which is cute and awesome because it means that they love them as much as I do!
