Apple Pancakes

I’ve seen Apple Pancakes on Pinterest a bunch of times
 now and thought that I would give them a try.
Typical of my cooking style I didn’t follow a specific recipe.
Just winged it as usual.
And they turned out pretty yummy if I do say so myself.

I started by coring and slicing up a couple of apples.  I left the peel on {mostly because I’m lazy}.
Then I whipped up some pancake batter from a bag.  This batter is from Costco and is my go-to mix for when we’re camping because all you need to add is water.  I added a little cinnamon to this batch too.
Next I coated each apple slice with batter…
and fried them on a hot, oiled pan.
Paired with maple syrup and margarine they turned out really yummy.  The four year old crowd turned up their noses a bit.  The texture was too different for them with a “Mommy, what’s in my pancake?!?!”  Alas my insistance that “nothing” was in the pancake didn’t work.  But daddy liked them!
Mmmm… breakfast tomorrow perhaps?
