Baked Potato Supper

We love to plan simple, easy campfire meals whenever we go camping and this one perfect.  Baked Potato Supper is a hit with both Darcy and the boys whenever we head into the great outdoors!

Inspired by these Potato Boats from Angie.

Recipe type: Camping
Ingredients
  • 4 large baker potatoes (tip: bake and wrap in foil at home to pack for camping)
  • 10-12 Ham slices
  • 10-12 Pepperoni slices
  • 10 - 12 Cheese slices
  • 4 tsp Butter
  • 4 Tbsp Sour cream
  • ¼ cup Chives
  • Bacon bits (optional)
Instructions
  1. Slice the potatoes, not quite all the way through about four sections for each potato.
  2. Fill slices with alternating ham, pepperoni and cheese layers. Wrap in tin foil.
  3. Cook on the fire or grill for about 20 minutes or until the potato is heated through and cheese is melted.
  4. Top with butter, sour cream and chives. Bacon bits are a great addition too!

Man o man these are awesome.  I love Camping Meals that require very little preparation and taste this delicious!   My biggest tip for camping is to do as much of the prep work at home as you can.  It’s easier to clean up the mess at home than when you’re working in an outdoor kitchen, tenting it.
What would you top this loaded potato with??

So happy to have found your blog! So many pinterest camping ideas lead to blogs where they say “we don’t camp much… but this seems like a good idea?” so it’s very nice to find a blog where the author actually camps. Anyway, we are vegetarian and I’ve made similar baked potato dinners but we use sweet potatoes and top with a black bean / bell pepper / mushroom topping with taco seasoning and sour cream. SO yum!
