Banana Chocolate Chip Mini Muffin Recipe

This is my go to Banana Chocolate Chip Mini Muffin recipe.  I seriously use it all. the. time.  Let me tell you why.  I bake a double batch of these puppies up every couple of weeks, throw them in the freezer and have the perfect homemade snack for lunches all month long.  Are you with me?!?  Epic right?

Ingredients:
1 3/4 cup flour
2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1/3 cup shortening
2/3 cup sugar
2 eggs
1 cup mashed bananas
1/2 cup chocolate chips

Directions:
Sift together dry ingredients.  Cream together sugar and shortening.  Add bananas and chocolate chips.  Mix all of the ingredients together well.  Scoop into greased mini muffin tins and bake at 350 for 20-25 minutes.  Tip:  use a cookie scoop,  like the one from Pampered Chef,  for dropping the perfect amount of dough into the muffin tin cups.

Once cool I put these into freezer safe bags and into the freezer for easy lunch packing.  I also have to hide them from the family before they all get eaten *wink*.
