Cranberry Bars

 

I love a recipe that uses supplies that I already have in the house.  One where I don’t have to search the definition of an ingredient on Wikipedia.  The Best of Bridge series of cookbooks are awesome for having recipes that use simple, common ingredients to create yummy dishes in new ways.  These Cranberry Bars are no exception.  The ingredients include flour, sugar, butter, brown sugar and frozen cranberries.  Simple right?!!?  And they are super delish! 

First let’s make the crust:
1/2 cup cold butter
1/4 cup sugar
1 cup flour

Cut butter into sugar and flour until crumbly.
Pat into an 8″x8″ pan and bake at 350 degrees fro 15-20 minutes, or until golden.
Now for the filling:
1 1/2 cups of fresh or frozen cranberries
1/4 cup packed brown sugar
2 eggs
1 cup firmly packed brown sugar
1 tsp vanilla
1/3 cup flour
1/2 tsp baking powder
1/4 tsp salt
In a saucepan over medium heat, cook cranberries and 1/4 cup brown sugar until berries are softened.
In a large mixing bowl, beat eggs and brown sugar.  Beat until thickened.
Add vanilla.
Combine and add dry ingredients.
Cooled cranberries.
Stir in cranberry mixture.
Spread mixture over crust.
Bake at 350 degrees for 35-40 minutes.
Dust with icing sugar and cut into squares. 
These have a really nice blend of shortbread / sugar / tartness.
