Raspberry Freeze

Oh my gosh!  This dessert is fan-freakin-tastic!!!
Seriously yum.
Darcy’s been asking me to make that “freeze” dessert that his sister used to make all the time.  After calling her for the recipe, we came up with this one from memory…

Combine filling:
3 cups of frozen berries {defrosted}
1 tub of whipped topping {1 litre}
1 tsp lemon juice
1 cup white sugar

Mix well.  Be sure that your fruit is completely defrosted.
I used fresh raspberries for about half of the fruit.  You could use fresh or frozen; strawberries, blueberries, blackberries, raspberries etc.  We like to chop the fruit finely.
Combine crust:
1 cup flour
1/2 cup butter or margarine
1/4 cup brown sugar
1/2 cup chopped pecans
Mix well.

Press crust mixture into the bottom of a 8 or 9″ greased, spring form pan.  Bake for 14-16 mins at 350 degrees.
Pour filling mixture over crust and place in the freezer overnight or for at least 8 hours.
Take out of the freezer at least 20 minutes before serving.
This is the perfect dessert for Spring/Summer gatherings!  Doesn’t it look amazing!?!?
It is!!
Be sure to pin this one for when the snow melts
{although it’s good while snuggled on the couch with your Valentine too}.
Enjoy!
