Sweet and Salty Salad in a Jar

Hello again! Thanks for sticking with me while Heather is off on her adventures!  I’m not sure about you but I love salad in a jar! This time of year there is no shortage of fresh, delicious produce available making it super easy to throw together a salad.

If you’re like me and love to have sweet and salty snacks, this recipe is for you! Plus, it’s salad so totally healthier than the sweet and salty snacks that usually make their way into my mouth. The recipe calls for cranberries (which I actually can’t have), so I used blueberries I picked from my local community garden instead. So yummy!

Sweet and Salty Salad in a Jar

Serves: 1 serving
Ingredients
  • ¼ cup diced peppers
  • ¼ cup sliced cucumber
  • 2 Tbsp corn nibblets
  • 2 tsp cranberries
  • 2 tsp sunflower seeds
  • 2 cups spring mix or spinach
  • 1 Tbsp feta
  • 6-8 parmesan crisps (found at Costco)
Instructions
  1. Prepare all ingredients and layer in a 1 Quart mason jar.
  2. Toss and serve with dressing.

Ingredients:

1/4 cup diced peppers
¼ cup sliced cucumber
2 Tbsp corn niblets
2 tsp cranberries
2 tsp sunflower seeds
2 cups spring mix or spinach
1 Tbsp feta
6-8 parmesan crisps (found at Costco)

Instructions:

  1. Prepare all ingredients and layer in a 1 Quart mason jar, heaviest to lightest.
  2. Toss and serve with dressing.
