Zucchini Lasagna

 

Holy fabulous lasagna batman!
Wow.
This.
Was.
So.
Good.

Much to the dismay of my poor husband, I have been testing out a bunch of the recipes that I have pinned onto my Diet Shmiet board.  I would say that half of them have been successful, Darcy would say more like one in five.  He’s a meat and potatoes kind of guy.  None of this fancy Quinoa or roasted peppers… give him a still mooing steak and he’s a happy camper.

So there was some debate over this lasagna.  Darcy wouldn’t even try it.  And I needed to know, was it just me?  Or was it truly that good?  So I brought it to a play date and and all of my girlfriends agreed…

DELICIOUS!

as my starting off point and modified it a bit with my own homemade ingredients.


My goods:
one batch of this spaghetti sauce
three medium zucchini, sliced 1/8″ thick
340 g Kraft shredded Italian three cheese
500 ml cottage cheese
1/4 cup parmesan cheese
1 egg

In a medium bowl mix the cottage cheese, egg and parmesan cheese.

Basically you layer all of the ingredients like you would in a traditional lasagna.  But first you have to make sure to get as much water out of the zucchini as you can, otherwise the lasagna will be too runny.

To prepare the zucchini you put it in a colander and lightly salt each piece.  Let that rest for at least 10 minutes.  The salt will help to draw out the moisture.  Then lay the zucchini slices on a clean towel and pat/press dry.  Next grill the zucchini {I used our George Forman grill} until just cooked.  Now you are ready to layer everything.

Spaghetti sauce, zucchini, cottage cheese mixture, Italian cheeses, spaghetti sauce, zucchini, cottage cheese mixture and Italian cheeses.

Bake for 55-60 minutes at 350 degrees and serve.
It was even great the next day!

    Oooh! I was thinking about trying something like this. I’m really trying to eat less carbs – the last time I went gluten/carb free/paleo diet-ish I felt so good!
